House special mei fun
There are many recipes for mei fun, but my favorite is still the House special mei fun made by my uncle when I was a child. It's not complicated to make.   • Today I'm going to make a House special mei fun. First of all, soak 500g of mei fun in warm water for 20 minutes. Then, fish it out and set it aside.
  • Then add 20ml of cooking oil to a frying pan, crack 4 eggs into a bowl and whisk to combine. Then turn the heat up to high and pour the egg mixture into the frying pan, stirring constantly. Then pour the scrambled eggs into a bowl and set aside.
  • Add 10ml of cooking oil to the wok, turn on the heat, add 5g of chopped garlic, 5g of chili, and 5g of shallots to the wok, and stir-fry. Then, add 200g of chopped ham sausage and stir-fry for 30 seconds.
  • Add 100g of shredded cabbage and 100g of carrot to the wok and stir-fry for 2 minutes.
  • Pour the prepared vermicelli into the wok, add 5g salt, 3g monosodium glutamate, 5g soy sauce and 3g oyster sauce.
  • Then add 100g of chopped garlic cloves and scrambled egg.
  • Then turn on medium heat and keep stirring for 5 minutes. The delicious House special mei fun is ready!
Notes
1. Mei fun should be soaked in warm water for 20 minutes.
2. To make House special mei fun, prepare ham, garlic cloves, eggs, cabbage, carrots, and other ingredients in advance. This will keep you busy while cooking.
3. When cooking, preheat the frying pan and then add cooking oil. This will prevent the ingredients from sticking to the pan.
