Ingredients
  
  • 400 g glutinous rice
  • White sugar 80 g

  • Dried osmanthus
  • brown sugar
  • 45 g of water
Instructions
 
  • Prepare 400 g glutinous rice,Soak in water for more than 4 hours.
  • At this time, you can grind the glutinous rice with your fingers.
  • Filter out the water and let dry,Grab the glutinous rice with your hands, you won’t feel a lot of moisture, but the glutinous rice is moist,Just reach this state.
  • Use a food processor to beat the glutinous rice into powder.
  • Strain the glutinous rice flour through a 40-mesh sieve,Let the glutinous rice flour stand for three hours.
  • Add 80 g sugar,Add 45 g of water and stir while adding,Knead the glutinous rice flour evenly.
  • Grab the rice noodles with your hands to form a ball, press lightly to disperse it,Just reach this state.
  • Prepare a square mold, or a square lunch box,Filter the glutinous rice flour into the mold again with a 20-mesh sieve.
  • When filtering halfway, use a spatula to flatten the glutinous rice flour without pressing down.
  • Sprinkle with brown sugar.
  • Continue to filter the remaining glutinous rice flour with a sieve,Then use a spatula to scrape it flat without pressing down.
  • Cut it into cubes with a spatula.
  • Put it in a steamer or steamer and steam for 30 minutes.
  • After taking it out, demould, add sweet osmanthus liquid,Sugar sweet-scented osmanthus liquid: (honey add sweet-scented osmanthus, mix well).
  • Sprinkle with dried osmanthus.
  • Osmanthus candy is ready,Be sure to eat it while it is hot, it will affect the taste if it gets cold,If it gets cold, steam it for another 5 minutes.
Notes
1、 The glutinous rice should be soaked in water for more than 3 hours. The time can be more but not less, otherwise it will affect the glutinous rice to absorb water and affect the taste of the sweet-scented osmanthus cake.
2、When scraping the glutinous rice flour with a spatula, do not press down, otherwise the sweet-scented osmanthus cake will be hard and not soft enough.
3、 The sweet-scented osmanthus cake should be eaten while it is hot, it will affect the taste when it gets cold.
4、 Sugar osmanthus liquid method: honey and dried osmanthus, mix well.
