1、Introduction
Tomato stir-fried beans is a homemade dish that can be prepared in just 5 to 10 minutes. It features two distinct flavors: the sourness and sweetness of tomatoes. Adding a small amount of chili sauce enhances the taste even further. When I was a child, my mother often made tomato stir-fried beans because it was both easy to prepare and delicious. We also used to grow beans in our backyard, making them easy to pick.
Tomato stir-fried beans can be served with rice or noodles. You can also add a small amount of scallions, chives, and eggs. I like to include a little chili sauce for extra flavor.

3、Then add 3 g of salt and stir-fry over low heat until the bean skins turn golden brown. Pour the beans into a bowl and set aside for later use.

5、Important Tips
1、 Choosing long beans for this dish makes it more delicious. Avoid using old beans, as they have a poor taste.
2、 Some people blanch the beans, but I prefer to stir-fry them over low heat using a wok. Both methods are acceptable, but be sure the beans are cooked thoroughly.
3、To make tomato stir-fried with green beans, first add the green beans, then add the tomatoes. During the stir-frying process, use a spatula to press the tomatoes into a sticky paste, which will enhance the flavor of the dish.
4、 Do not add too much white sugar; otherwise, the sweetness will overpower the sourness of the tomatoes and alter the flavor of the dish.
5、Do not add vinegar.

What is the difference between blanching beans in water and stir-frying them in a wok?
After blanching, the beans retain more moisture, making them more likely to absorb the flavors of seasonings later. Beans cooked in a frying pan have lower moisture content and are coated with oil on the surface. Their skins develop a burnt yellow color, resulting in a more distinctive taste.
What should I do if there is too little liquid when frying tomatoes?
You can press the tomatoes with a spatula, add a small amount of water, and stir-fry them over low heat until they form a paste. This will make the tomato stir-fry more flavorful.
What is the best sauce to add to a tomato stir-fry?
I like to add chili sauce and Douban sauce the most. You can also make your own sauce to add heat, freshness, and depth of flavor to this dish.
