Young Chow Wonton soup

  • 10 g shrimp skin

Instructions
 
  • Today I'm going to make Young Chow Wonton soup, it's complicated to make but it's delicious and many people love wontons. First make the onion and ginger water, prepare 5 g of shredded onion, 5 g of shredded ginger and one star anise, put them into a bowl, then add 50 ml of hot water to the bowl and soak the ingredients for 20 minutes to let the flavors of the ingredients blend into the water.
  • Then prepare 500 g of pork or beef and break them up with a meat grinder. Then add 3 g salt, 3 chicken essence, 3 g sugar, 2 g white pepper, 3 g thirteen spices, 5 g soy sauce, 3 g oyster sauce and 3 g corn starch to the meat mixture.
  • Then add the prepared onion and ginger water to the meat mixture twice. After adding the onion and ginger water for the first time, use chopsticks to stir the meat mixture with the purpose of letting the meat mixture absorb the onion and ginger water for a fresher flavor. Keep stirring in one direction, so that the meat mixture can become more viscous. At the end of the first stirring, continue to add the spring onion and ginger water, and then continue to stir for 30 seconds to allow the meat mixture to fully absorb the water and seasoning.
  • Then add 5 g of sesame oil to the meat mixture and mix well, this will allow the filling to retain moisture.
  • Then add 5 g of chopped shallots and mix well. The filling for the Young Chow Wonton soup is ready.
  • Then let's make the onion oil, prepare 1 onion, chop the onion; prepare 10 g chopped shallots, 5 g chopped ginger, 5 g chopped garlic. Mix them together.
  • Then add 20 g cooking oil in a frying pan, heat it on fire, pour the chopped onion, scallion, ginger and garlic prepared in the previous step into the frying pan, turn on a low heat and stir fry, turn off the fire when the ingredients turn golden brown, don't stir fry for too long or the onion oil will have a bitter flavor. Turn off the heat and add 10 g of shrimp, stir fry for 5 seconds. Then pour the finished green onion oil into a bowl and set aside.
  • Then we start wrapping the wontons, you can buy wonton skins from the supermarket or you can make your own, the latter is more time consuming. Take a wonton skin and take the right amount of filling and put it on the wonton skin and wrap the filling with the wonton skin. There are many ways to wrap the wonton skins, you can also wrap the wontons according to your preference, different shapes of wontons taste just as delicious. Put the ravioli on a plate and set aside.
  • Then add water to a pot, turn on the heat and bring it to a boil, pour the wontons into the pot and cook for 3-4 minutes. You have to pour the wontons after the water boils, don't cook the wontons for too long or the skin of the wontons will break easily.
  • Then start making the stock for the Young Chow Wonton soup by adding 5 g chopped shallots, 3 g cilantro, 3 g nori, 2 g salt, 2 g chicken broth, 2 g white pepper, 3 g soy sauce, 3 g shrimp peel, and 10 g homemade scallion oil in a bowl. Add two tablespoons of the hot water used to cook the wontons and the soup is ready.
  • Pour the cooked wontons into the soup, a bowl of Young Chow Wonton soup is ready, you can also add a small amount of chili oil, vinegar to taste according to your own preference, I really like to eat hot and sour flavor Young Chow Wonton soup. And you can add ingredients like fungus, mushroom, eggplant, tofu, etc. to the wonton filling, the Young Chow Wonton soup you make will be different.
Notes
1、 when making wonton filling add a small amount of sesame oil, it allows the filling to retain moisture.
2、When making the scallion oil, don't stir-fry for too long, otherwise the flavor of the scallion oil will become bitter.
3、 When cooking wontons, wait for the water to boil before pouring in the wontons. Cook the wontons for 3-4 minutes, not too long.
4、 add a little chili oil and vinegar to the Young Chow Wonton soup, its flavor will be more special.
