  • At the same time we can make the dough,Add 200g flour and 2g salt to the bowl and mix well,Then 105g of warm water (60-70 degrees Celsius) (add in three times),Mix flour and water well and knead into dough.
  • Then let the dough rest for 30 minutes to allow the flour and water to fully combine.
  • Let's start making Shiu mai stuffing,Prepare 500g of meat and cut it into small pieces,You can use pork, beef, chicken, lamb, shrimp and other ingredients (according to your preference).
  • Prepare 200g shiitake mushrooms, 200g fungus, 200g carrots and cut them into small pieces,You can also add other vegetables (according to your preference).
  • Then add 20g cooking oil to the frying pan and heat it up,Put the cut meat into the wok and fry continuously for 2 minutes.
  • Then add various vegetables and continue to stir fry for 5 minutes.
  • Add 50g corn and 50g green beans, continue to stir fry.
  • Then add 10g soy sauce, 5g oyster sauce, 10g sugar, 10g salt,Add 10g of water, heat to boil.
  • Then add the previously steamed glutinous rice and mix well,At this point you can taste the filling, it tastes very delicious.
  • Then we start making Shiu mai,Knead the dough into long strips and cut into small pieces.
  • Then use a rolling pin to roll the dough into dumpling skins,It is a little thicker than the dumpling skin to avoid the soup overflowing from the filling.
  • Use chopsticks to press lace on the edge of the dough (to make the Shiu mai look better).
  • Then wrap the filling in a dumpling wrapper,Similar to the method of making dumplings, just leave the seal unsealed.,Try it a few times and you'll get better and better.
  • Then put the Shiu mai into the steamer,Just boil it for 10 minutes.
  • The steamed Shiu mai is translucent, very beautiful and delicious,If you can't eat all the Shiu mai made at one time, you can also put it in the refrigerator to freeze,After that, when you eat Shiu mai, you can directly steam it in a steamer for 10 minutes and you can eat it.,If you don't like the Shiu mai ingredients I made, you can add your favorite ingredients,I believe you can make more delicious and different Shiu mai.
Notes
1、 Soak glutinous rice in water for 5-12 hours to make it softer and more glutinous.
2、 Let the dough rest for 30 minutes after kneading, so that the flour and water can be fully integrated.
3、 I used pork to make the stuffing, you can also use beef, chicken, lamb, shrimp and other ingredients, or you can use no meat ingredients.
