Zha Jiang Noodles__Zha Jiang Mian
Zha Jiang Mian are very popular in northern China. Zha Jiang Mian are a specialty in Beijing, Tianjin and other regions. There are many ways to make sauces, and various ingredients can be added.
The Zha Jiang Noodles I made are relatively simple. In fact, you can add cucumbers, bean sprouts, soybeans, green beans, chili and other ingredients. The traditional Zha Jiang Noodles are complicated to make, but they are very delicious.

  • Chives
  • Sliced ginger
  • Garlic cloves
  • 500 g beef (or pork or lamb)
  • 1 star anise
  • 30 g minced ginger
  • 1/2 onion
  • 30 g minced garlic
  • 50 g chopped green onions
  • 4 tablespoons of soy sauce
  • 3 spoons of soy sauce
  • 2 scoops of oyster sauce
  • 1 tablespoon sugar
  • 1 tablespoon salt
  • 200 g noodles
  • Cucumber shreds
  • Pickled radish
Instructions
 
  • Today I'm going to make Zha Jiang Noodles,Add 50 g of edible oil to the pan and heat it over high heat,Add green onion, ginger slices, garlic cloves, stir fry for 3 minutes.
  • Scoop out the green onions, ginger slices, and garlic cloves,Pour in 500 g of cut beef (or pork or lamb).
  • Stir continuously until the beef changes color,Add 1 star anise and 30 g minced ginger and continue to stir fry.
  • Add 1/2 chopped onion, 30 g minced garlic, 50 g minced green onion, and continue to fry.
  • Add 4 tablespoons of soybean paste and mix well.
  • Add 3 spoons of soy sauce, 2 spoons of oyster sauce, 1 spoon of sugar, 1 spoon of salt.
  • Continue to stir fry, fry on low heat for 8 minutes,Our sauce is ready.
  • If you can’t finish eating, you can pour it into a glass bottle and store in the refrigerator..
  • Boil water in a pot, add 200 g noodles,Boil on low heat for 5 minutes.
  • Remove the noodles and put them in cold water to cool down.
  • Then scoop the noodles into the bowl.
  • Pour in the sauce made before.

Notes
1、 Don't put too much salt, because there are soy sauce and soy sauce in the ingredients, they all contain salt.
2、 If you don't like greasy, you can reduce the amount of cooking oil. When frying the beef, use a low fire, not too long to avoid burning.
3、 You can make more sauces at one time, keep them in the refrigerator, and heat them in the microwave when you eat them. The time for making Zha Jiang Noodles will be shorter, which is very convenient and delicious.
