  • Open the crab shell and remove the stomach of the crab.

  • Remove the shell from the tail of the flower crab.
  • Rinse the sand from the gills of the flower crab,Be careful not to wash off the crab roe.
  • Cut the crab claws after cleaning.
  • Cut off the crab claws, then cut the crab in half from the middle.
  • Crack the crab claws with a knife.
  • Dip the crab yellow parts with starch,This way the crab roe will not fall out when the crab is fried.
  • Prepare the ingredients and cut the ginger slices.
  • Cut the shallots into sections, divided into white onion and green onion leaves.
  • Heat up the wok, add more cooking oil,Pour the crab into the pot and fry on medium heat.
  • Fry for 1 minute on both sides, and the crab will change color.,Fry the crabs and pour them out, set aside.
  • Leave some hot oil in the wok,Pour in the ginger slices and fry them for a fragrance,,Just turn the ginger into golden brown.

  • Add appropriate amount of rice wine, 200 ml hot water,,Boil the scent of crab.
  • Add 1 spoon of sugar, 1 spoon of pepper, 2 spoons of light soy sauce, 1 spoon of oyster sauce,Stir-fry evenly, boil for 5 minutes, cook the crab.

Notes
1、 Be careful when cleaning flower crabs to avoid being caught by crabs.
2、 There is mud and sand on the gills of the flower crab, which must be washed away.
