Instructions
 
  • Today, I want to make Pad Woon Sen Noodles, which are simple and delicious.
  • First, prepare 500g of rice noodles. Soak them in warm water for 1 hour, then remove and drain them.
  • Then add 10 g of soy sauce and 50 g of edible oil, stir well, and set aside for later use.
  • Then add 80 g of cooking oil to the wok and heat it up. Add 2 eggs and stir-fry continuously for 30 seconds.
  • Then add 20 g of minced garlic, 10 g of shredded ginger, and 20 g of chili. Stir-fry quickly for 10 seconds.
  • Then add the rice noodles and continue to stir-fry for 1 minute.
  • Then add 100g of bean sprouts, 100g of shredded carrots, 100g of chives, 10g of soy sauce, 3g of salt, 3g of thirteen-spice powder, 2g of oyster sauce, and 3g of white sugar. Stir-fry on high heat for 2 minutes.

Notes
1、 Soak rice noodles in cold water for 3 to 6 hours, or in warm water for 1 hour.
2、Soaked rice noodles tend to stick together easily. Add edible oil and stir evenly to prevent the noodles from sticking.
3、 Stir-fry the rice noodles quickly over high heat; otherwise, they may become overcooked and affect the taste.
4、Soak the rice noodles in warm water for as long as possible.
5、In the final stage of preparing Pad Woon Sen Noodles, a small amount of chicken soup can be added, then heated over high heat for 10 seconds to evaporate excess water, enhancing the flavor.
