Ingredients
  
  • Pea starch
  • Water
  • 3 g of salt
  • 30 g minced garlic
  • 100 g shredded carrots
  • 100 g shredded cucumber
  • 30 g red chili pepper
  • 10 g coriander
  • 10 g scallions
  • 30 g soy sauce
  • 30 g vinegar
  • 5 g oyster sauce
  • 5 g white sugar
  • 5G Sesame
  • 20 grams of edible oil
Instructions
 
  • Today, I am going to make Jelly Noodles, and you can easily try it at home. The method is very simple. First, prepare two bowls of the same size. Add pea starch to one bowl and water to the other.
  • Pour starch and water into a frying pan, stirring evenly to ensure the starch is fully dissolved. Do not heat the mixture at this stage.
  • Then add 5 bowls of water and 3 g of salt.
  • Then, turn the heat to medium and cook for 2 minutes, stirring continuously to prevent burning. After that, reduce the heat to low and continue stirring.
  • When starch becomes viscous and transparent, it is already cooked.
  • Then cover the pot and let it sit for 5 minutes to allow the starch to cool down.
  • Prepare another bowl or wok, pour the cooked starch into it, and let it stand for 1 hour. The starch paste will gradually solidify.
  • Next, let's prepare the seasoning sauce. Gather 30g of minced garlic, 100g of shredded carrots, 100g of shredded cucumbers, 30g of red chili peppers, 10g of cilantro, and 10g of scallions.
  • Then add 30 g soy sauce, 30 g vinegar, 5 g oyster sauce, 5 g white sugar, and 5 g sesame seeds.
  • Then pour 20 g of heated cooking oil on top; these ingredients will emit a strong aroma.
  • Then, take out the cooled and solidified jelly, which should be clear, transparent, and elastic. Use a scraper to cut the jelly into strip-like shapes.
  • The prepared jelly is very elastic.
  • Then pour the prepared seasoning sauce over the jelly, stir evenly, and the delicious jelly is ready. With a few attempts, you can successfully make it.
Notes
1、 To select high-quality pea starch, the Jelly Noodles made from it should be more transparent, clear, and have a more delicate taste.
2、The ratio of starch to water is 100 g of starch mixed with 400–600 ml of water.
3、 When heating starch paste, use medium or low heat. High heat can cause burning, so constant stirring is necessary throughout the heating process.
4、When using a scraper to handle Jelly Noodles, dip the scraper in water beforehand to prevent the Jelly Noodles from sticking to it.
5、When preparing seasoning water, you can add other ingredients such as peanuts, shrimp, tofu, and more.
