Hokkien Mee
In China, Hokkien Mee are a popular homemade dish that combines noodles with vegetables. The recipe is simple, and many people enjoy it. Instructions
 
  • Today, I'm going to share a recipe for Hokkien Mee.
  • First, prepare the seasoning sauce by adding 10 g light soy sauce, 5g dark soy sauce, 5g oyster sauce, 3g monosodium glutamate, 3g thirteen-spice powder, and 5g cumin powder to a bowl. Stir the mixture evenly.
  • Then add water to the pot and bring it to a boil. Add 500g of Lamian noodles and cook for 5 minutes.
  • After cooking the noodles, drain them and rinse with cold water. Cooling the noodles in cold water will make them more elastic and improve their texture and taste.
  • Then add 60 g of cooking oil to the wok, heat it up, and add 2 eggs. Stir-fry for 30 seconds.
  • Then add 100 g of ham and stir-fry for another 30 seconds.
  • Then add 50 g of onions, 50 g of bean sprouts, and 50 g of vegetables. Stir-fry over high heat for 30 seconds.
  • Then add the cooked noodles and the prepared seasoning sauce.
  • Stir-fry evenly, allowing the noodles and seasoning sauce to blend thoroughly. The delicious Hokkien Mee are now ready. It's very simple.
Notes
1、 After cooking the noodles, rinse them with cold water to cool them down. This helps make the noodles more elastic and improves their texture.
2、Some people use Lamian noodles to make chow mein, while others prefer hand-rolled noodles or instant noodles, each offering distinct flavors.
3、 After cooking the noodles and rinsing them with cold water, add 10 g of cooking oil and stir thoroughly to prevent the noodles from sticking together.
4、If you want Hokkien Mee to taste good, you must stir-fry them over high heat..
5、 Onions, green vegetables, bean sprouts, and other ingredients are added last and only need to be stir-fried briefly to cook. Adding them too early will cause the vegetables to lose their crisp texture.
6、You can also add a spoonful of meat broth at the final stage, then simmer over high heat to make the Hokkien Mee fresher and more fragrant.
