Fried Buns(shui jian bao)
Fried buns are a common breakfast for many people in China. They are easy to make and have a crispy texture. Fried buns are often enjoyed with millet porridge and soybean milk for breakfast. When I was a child, my favorite breakfast spot was the stall selling fried buns near the school entrance, and I would eat one or two every day.
There are many varieties of fried buns, with a wide range of filling options. The most popular ingredients include eggs, chives, tofu, and vermicelli. Some people also add pork, beef, lamb, shrimp, carrots, and other ingredients. The filling I use for my fried buns is primarily savory and aromatic. Adding chili and sugar creates a unique flavor profile.

  • 530 g flour
  • 5 g yeast powder
  • 100 g of edible oil
  • 20 g scallions
  • 10 g soy sauce
  • 5G Old Drawings
  • 2g Thirteen Fragrances
  • 200 g vermicelli
  • 200 g chives
  • 5 g sesame oil
  • 100 g egg
  • 100 g tofu
  • 5 g salt
  • 3 g oyster sauce
  • 10 g starch
  • 400 mL of water
Instructions
 
  • Today, I am going to make Fried Buns. First, prepare 500 grams of flour and add 5 grams of yeast powder.
  • Then add warm water and mix, kneading the flour into a smooth dough. Ensure the dough is not too hard, as this will affect the taste of the fried buns.
  • Then, wrap the dough with plastic wrap and let it sit for 30 minutes.
  • Then add 50 g of cooking oil to a wok, heat it up, and add 20 g of scallions, 10 g of light soy sauce, 5 g of dark soy sauce, 2 g of thirteen-spice powder, and 100 g of water.
  • Then add 200 g of vermicelli. Heat over low heat and stir well to allow the vermicelli to absorb the soup.
  • Prepare 200 g of chives, chop them into small pieces, and add 5 g of sesame oil. Stir well to enhance the flavor of the chives.
  • Then add 100 g of scrambled eggs, 100 g of tofu, and vermicelli to it.
  • Then add 5 g of salt and 3 g of oyster sauce, stir them evenly, and set aside for later use.
  • Then take out the fermented dough, knead it for 1 minute, and release any gas trapped inside. This will make the dough smoother.
  • Then take a small piece of dough and stretch it into the shape of a dumpling wrapper.
  • Then take the filling and place it into the dough, similar to making dumplings.
  • Then, let's make the flour mixture. Add 30 g of flour, 10 g of starch, and 300 ml of water to a bowl. Stir well and set aside for later use.
  • Then, apply a layer of cooking oil to the frying pan and place the prepared item into the pan. Be sure to place the sealed side facing downwards.
  • Then, turn on low heat and cook for 2 minutes until the bottom of the Fried Buns turns light yellow.
  • Then pour in the prepared flour water until it reaches one-third the height of the water-fried package.
  • Then cover the pot and heat it over medium heat for 12 minutes. At this point, the flour and water in the pot have been fully absorbed.
  • Then pour 50 g of cooking oil over the fried buns to make them crispier.
  • Then reduce the heat and cook for 3 minutes. The Fried Buns are ready when the bottoms turn golden yellow and become very crispy.
Notes
1、When making dough, warm water at a temperature of 35–40 degrees Celsius should be used.
2、Adding a small amount of sesame oil or cooking oil when preparing the filling helps retain the moisture in the vegetables and enhances the overall flavor.
3、In the final stage of making a fried buns, heating it on high heat for 10 seconds can make the bottom of the bun crispier.
4、Newcomers can use an iron pot to make fried buns. If they are concerned about burning, they can add extra cooking oil.
